There is white onion, shallot, yellow onion, red Tropea onion ... you are sure you know which onion to choose for the various recipes to prepare in the kitchen? The answer is not so obvious. Here is a reminder that will help you choose the right onion for various occasions.

  • The golden onions, with a strong flavor, are more suitable for sautées, soups and velvety.
  • White onions, with a more delicate flavor, are perfect to prepare stewed, baked or in the stuffed onion recipe.
  • Sweet white onions are more suitable to serve raw but also to enrich pizzas and focaccias.
  • Red onions, characterized by a sweeter flavor and less acidic taste, are ideal for salads, as a base for jams and chutneys to combine with cheeses.

Is onion or shallot better?

Recipe with raw red onion

Thered onionsthey are perfect to serve raw, let's see one recipe with spring onionsand red onions. Here is the recipe for an easy and quick salad but, at the same time, particular and delicious. Ingredients for 4 people:

  • 300 g of quak cheese
  • 600 g of boiled new potato chips
  • 4 red Tropea onions
  • 2 spring onions
  • a sprig of chopped parsley
  • a bunch of finely chopped chives
  • a clove of minced garlic
  • extra virgin olive oil
  • White wine vinegar
  • salt and pepper as needed

New potatoes can also be eaten with the whole peel. In this case it will have to scald and not boil completely. After slicing all the ingredients, combine them, season them and let them rest for at least 30 minutes in the fridge before serving.

Spring onion pancakes

If you've come this far hunting forrecipes with spring onions I certainly could not disappoint you. Here are the ingredients for rustic pancakes with spring onions and turnips.

  • 350 g of Roman ricotta
  • 120 g of flour
  • 2 eggs
  • 100 ml of milk
  • 1 teaspoon of baking powder
  • 4 spring onions
  • 2 medium white turnips
  • 50 g of roasted peanuts
  • 1 sprig of chopped parsley
  • apple cider vinegar
  • extra virgin olive oil
  • salt and pepper as needed

Peel the turnips and dip them into a bowl of cold water.

Create the dressing with 4 tablespoons of oil, 2 tablespoons of vinegar, a pinch of salt, a grind of pepper and chopped parsley. Set the dressing aside in a bowl.

Drain the turnips and cut them into julienne strips. Season the turnips with the mixture prepared previously.

In a mixer, add cottage cheese, eggs, flour, yeast and milk. Create a homogeneous mixture and place it in the fridge, in the meantime, slice thespring onions.

Blast thespring onionsin a pan, with a drizzle of oil. Add salt and pepper and cook for 5 minutes. Allow the spring onions to cool and then dip them in the batter with the ricotta.

Heat a non-stick pan and pour in 4 - 6 tablespoons of the batter, arrange them to create a disc (yourrustic pancake) and cook for 2 minutes.

Rustic pancakes are served with julienne turnips and garnished with roasted peanuts.
